Celebrate the Valentine’s long weekend in style! We’re releasing our much anticipated 2017 Seven Stars Polaris. The basis for our sparkling program, it guides the other members of the Seven Stars collection. Crafted in the traditional Méthode Champenoise style, the wine undergoes a secondary fermentation or prise de mousse, where we literally “capture the sparkle” in the bottle.
Our elegant, yet powerful Blanc de Blancs Brut sparkling wine was made from 100% unoaked Chardonnay grapes. The fruit was picked with high natural acidity to maintain its vibrancy throughout the extended time in bottle. The cuvée was left en tirage for a minimum of 18 months encouraging abundant brioche and classic autolytic characteristics. After riddling we disgorged Polaris and added our dosage for complexity and depth of flavour. This vintage shows enticing aromas of Granny Smith apple, peach and lime, along with freshly baked biscuits. The mousse is creamy contributing fullness to the weight of the wine. Well-balanced with a crisp, clean finish, this seductive bubbly has lovely depth and richness.
The previous 2016 vintage was honoured Best Sparkling Wine in Canada at the prestigious Champagne and Sparkling Wine World Championships in the UK, a Gold at the Los Angeles International Wine Competition, as well as eight 90+ point scores from critics across North America, with Wine Enthusiast Magazine writing “Racy, rich and creamy, it spent 18 months en tirage and drinks beautifully already, though it’s also built to age…” We believe the 2017 vintage is just as beautiful.
