Enjoy a Sparkling New Year’s

Say goodbye (and good riddance) to 2020 and ring in a sparkling new year with BC’s best bubbly. Our seven stars 2017 Polaris and 2016 Equinox make for a truly stellar celebration.

seven stars Polaris 2017 – featured in Western Living Magazine, The Georgia Straight, BC Living Magazine, The Province, Vancouver Sun and Food and Wine Magazine to name a few, this fantastic sparkler has been honoured with six 90+ point scores, by wine critics John Schreiner, Michael Lowe, Tim Pawsey, Anthony Gismondi, Rhys Pender, and Daenna Van Mulligen. Daenna writes, ”Nervy, outstanding, pristine. Township 7’s three sparkling options are simply outstanding. The Polaris, a blanc de blanc is made entirely from Chardonnay (sourced from estate vineyards in Oliver and Naramata) was left en tirage for 18 months to add complexity. 3,588 bottles were made, up from 596 in 2016. Complex and complete it offers fine notes of patisserie and lemons, honeysuckle and yellow apples with strong nutty undertones. Dry, rich and creamy yet fresh and finessed, it is elegant and lengthy with nervy acidity, and at this price excellent value.”

seven stars Equinox 2016 – awarded four 90+ points by wine writers Daenna Van Mulligen of Montecristo Magazine, John Schreiner, Rick VanSickle and Anthony Gismondi of The Vancouver Sun. Anthony writes “The Equinox is when the day and night are of equal length, which relates to the balance in this rosé. The colour is a beautiful pale pink/orange. The attack is fresh with persistent bubbles and ethereal citrus aromas with a dash of warm bread. The Seven Stars collection is crafted using traditional method techniques where the wine undergoes a secondary fermentation in the bottle. The wine tastes as it looks, all strawberries and ripe apples, with a touch of creamy brioche and plenty of salt and minerality that, in the end, is complex and well worth contemplating.”

For a special pairing on New Year’s, we suggest trying this Strawberry Soufflé recipe from our winemaker Mary McDermott. Surprisingly easy to make, this sweet and healthy treat needs only a couple of pantry staples for a pretty and superbly delicious dessert. Enjoy this elegant soufflé with our effervescent seven stars Equinox Rosé. A luxuriant bubbly with weight and richness, it is crafted with grapes from the historic Sperling Vineyards. The wine’s fresh strawberry and biscuit flavours are a brilliant match to this light and enticing soufflé.

INGREDIENTS

  • Nonstick vegetable oil spray
  • 2 12-ounce baskets of strawberries, hulled
  • 7 tbsp sugar
  • 1 tbsp cornstarch
  • ¾ tsp grated orange peel
  • 4 large egg whites

DIRECTIONS
Preheat oven to 400°F. Spray 6-cup soufflé dish with vegetable oil spray. Coarsely purée half of the berries, 3 tbs sugar and cornstarch in processor. Transfer to small saucepan. Stir over medium heat until mixture boils and thickens, about 3 minutes. Whisk in peel. Cool completely. Slice remaining berries. Transfer to medium bowl. Add 1 tbs sugar; toss to blend. Beat egg whites in large bowl until soft peaks form. Gradually add 3 tbs sugar; beat until stiff but not dry. Fold purée into whites in 3 additions. Transfer to prepared dish. Bake until soufflé is puffed and golden, about 18 minutes. Serve immediately with sliced berries.
