Avocado Pear & Macadamia Nut Salad

INGREDIENTS:
1 shallot, minced
2 tbsp rice wine vinegar
Kosher salt, black pepper
1 avocado, 1 pear, 1 lime
handful of arugula
4-6 tbsp avocado oil
½ cup macadamia nuts, toasted and chopped

DIRECTIONS:
Put shallots in a bowl, add vinegar, season with salt and pepper, set aside. Half avocado lengthwise, remove pit, cut thin slices. Fan half an avocado on individual serving plates and squeeze lime juice over it. Peel pear, cut in half, cut out seed core, cut into thin slices. Arrange on plate with avocado, squeeze lime juice over it. Mound greens in middle of the plate, season with a little salt. Stir oil into the shallot and vinegar mixture, adding as much as is necessary for a proper balance of acid and oil. Spoon dressing over the avocado, pear and greens, season lightly with salt and pepper and scatter macadamia nuts on top.
