A good egg!

We’re thrilled to add another premium piece of equipment to our cellar — a new concrete egg from Sonoma Cast Stone! It provides a classic winemaking technique for our winemaker Mary McDermott to use for fermenting grapes.

The egg shape harkens back to the ancient vessels used to ferment wine originally. With no corners, the wine is free to circulate naturally during fermentation, (and we can actually watch the wine move during this process of constant stirring). The shape also forces more of the cap to remain submerged, gently gleaning the utmost in fruit flavour and colour for the wine and reducing the need for punch downs during fermentation.
