A White for a Chilly Autumn Night

Warm up fall with our recently released 2020 Provenance Series Chardonnay.

This well integrated Chardonnay was predominantly sourced from Hidden Terrace vineyard in Oliver with small additions from other select sites including our Naramata Bench Estate. Half the wine was fermented in French oak barriques (225L neutral barrels) with the remaining 50% in stainless steel. Fresh and elegant this vintage displays fragrant Ambrosia apple, pineapple and citrus blossom aromas, with a hint of spice. The palate is dry yet round, and as it develops builds in richness and intensity. Flavours of vanilla bean, peach and bright citrus are followed by a lingering finish. Only 328 cases produced.

Ward off the cool autumn evenings with this delectably, rich comfort dish, Tagliatelle with Gorgonzola, Walnuts & Grilled Chicken, paired with Township 7’s Chardonnay.

Ingredients
4 chicken breasts, seasoned & grilled
1 lb (450 g) tagliatelle, pappardelle, or pasta of choice
2 Tbsp (1/4 stick) butter
¾ cup heavy whipping cream
¾ cup crumbled Gorgonzola cheese
¾ cup walnut pieces toasted
Freshly grated Parmesan
spices: 3 garlic cloves, minced, 1 tsp chopped fresh thyme, 1 cup chopped fresh basil

Method
Cook pasta. Drain, reserving 1 cup cooking liquid.
Melt butter with oil in large skillet over medium heat. Add garlic and thyme; sauté until fragrant, about 1 min. Add pasta, cream and Gorgonzola. Toss until sauce coats pasta adding reserved cooking liquid by ¼ cupfuls if dry. Mix in walnuts, then basil. Season pasta to taste with sea salt and fresh black pepper, sprinkle with Parmesan and serve immediately with grilled chicken breasts.
