Enjoy a heavenly experience to usher in the autumn equinox… Our just released sparkling Brut Rosé, seven stars Equinox 2016 is inspired by the celestial phenomenon when day and night are of equal length. This sophisticated, single vineyard sparkling wine is made from 100% Pinot Noir grapes sourced from long time organic and biodynamic growers, Sperling Vineyards in Kelowna. The grapes are picked with high natural acidity and lower sugars to allow for aging during extended time in bottle. The wine was left en tirage for 29 months to facilitate the development of rich and creamy autolytic characters. The wine has a fantastic complexity due to extended aging on lees and the tannin profile. The mousse is creamy with a cleansing acidity that makes the wine round and well balanced. A club exclusive with only 2168 bottles (361 six bottle cases) made!
