It’s International Champagne Day and we are celebrating with a new sparkling wine, seven stars Sirius! Named in honour of the most luminous star in our evening sky, Sirius is our luxury seven stars sparkling wine.
This 2015 single vineyard wine is crafted with fruit from our south Langley vineyard, which was planted over two decades ago. The temperate climate of this coastal area is ideal for growing cool climate grapes with low brix and high acidity. We harvested, pressed, and fermented the Chardonnay and Pinot Noir together. Only the free run juice in the cuvée lot was used for Sirius to produce a sparkling wine with greater finesse, subtle aromas, and a refreshing palate with good aging potential. The wine was left en tirage for 60 months for complex autolytics and to soften the acidity. An elegant Brut with verve, its intense fresh baked brioche aromas are followed by baked apple and honeycomb flavours with a delicate, creamy and soft mousse, and cleansing finish.
Nuanced and luminous, Sirius is a beautiful reflection of its distinctive terroir, and will cellar well for years to come. Honoured with a GOLD at the BC Lieutenant Governor’s Wine Awards last week, this golden sparkler is club exclusive with under 500 six bottle cases made!
