Equinox – when day and night are of equal length. Inspired by the equinox, we are excited to release the 2017 vintage of seven stars Equinox, which invokes the colour and balance of this sparkling Rosé. Our seven stars collection of sparkling wines are crafted in the Traditional Méthode Champenoise style in which the wine undergoes a secondary fermentation in the bottle. This adds aromas of just baked biscuits along with those fresh fruit aromas already present in the wine.
Gorgeous and elegant, this single vineyard Brut Rosé is made from 100% Pinot Noir grapes sourced from Sperling Vineyards in the Mission district of Kelowna. One of the longest grape growers in the Okanagan, their trailblazing site was first planted in grapes in 1925. Their Pinot Noir was planted by the family much more recently in 2008. What makes their terroir so unique is very diverse soils within the site, including a limestone seam underneath the vineyards. Renown viticulturist and vintner Ann Sperling farms the 44 acre property organically. We are thrilled with her fruit’s quality, intense fragrance and tantalizing, concentrated flavours.
The fruit for our sparkling wine was picked with high natural acidity and lower sugars to allow for aging during extended time in bottle. The wine was left en tirage for 30 months to ensure the development of autolytic characters and has fabulous complexity due to extended aging on lees and tannin profile. It displays red fruit on the nose including field ripened strawberries, rhubarb and apple. The mousse is creamy with a cleansing acidity that makes this sparkling wine round, complex and phenomenally well balanced.
