A modern chicken salad

A light salad that tastes as pretty as it looks… This fresh and colourful B.C. inspired recipe is a delightful low calorie meal that is a refreshing reminder of summer. Easy to pull together and beautiful on the plate, it is definitely not your gramma’s chicken salad! The dish is also beautiful with our club exclusive Reserve Pinot Gris. The vibrant peach aromas of the wine are a great match for the juicy Okanagan peaches of the salad. And the wine’s full round palate makes for a nice counterpoint to the tangy sweet/sour dressing. 

Our 2020 Reserve Pinot Gris is crafted with fruit grown on our Naramata Bench estate. The wine is 100% barrel fermented in neutral French oak to better retain the fresh fruit characters and add roundness to the mouthfeel. The ferments were spontaneous enabling a pure expression of the terroir. This vintage shows bright aromas of fresh peach, apple and citrus fruit. The full round palate has a slight natural sweetness flush with ripe pear, vanilla and tropical melon flavours. A beautifully balanced wine the ends with a flinty mineral finish. Peach and Blueberry Chicken Salad Recipe

Yield: 2 large servings
INGREDIENTS
Salad:
4 cups mixed greens
2 Okanagan fresh peaches, sliced
½ cup fresh B.C. blueberries
6 oz. B.C. free run chicken, grilled, sliced
handful of roasted walnut pieces
(Optional: 2 tbsp goat cheese, crumbles)
Salad dressing:
1 tbsp dijon mustard
1 tbsp balsamic vinegar
1 tbsp extra-virgin olive oil
1 tbsp water
DIRECTIONS
In a small bowl; whisk all of the dressing ingredients together; set aside. Separate the salad mixture between two plates and evenly divide the dressing over the salad. Enjoy with Township 7 Reserve Pinot Gris.
